Easy-to-make Japanese Curry using a boxed roux. Add some simple decorations and some pumpkins to make it festive enough for Halloween! Ingredients(3-4 servings) 1/2 small kabocha pumpkin 1 small carrot 1 small onion 1 small potato 1/2 teaspoons turmeric water (for the curry roux-amount is listed on the box) curry roux (3-4 servings) 2 cups uncooked Japanese (sticky) rice 2 1/4 cups water (for the rice) DIRECTIONS: Wash rice. Add 2 1/4 cups water or follow the instructions on your rice cooker. Add the turmeric and give it a good mix around. Cook the rice. Cut the ends off the kabocha pumpkin and take out the seeds. Slice off the end of the pumpkin. Cut out decorations for the jack-o-lantern face. Make sure to make the mouth, nose, eyes and the top of the pumpkin. Cut the rest of the pumpkin into bite-sized pieces. S.ice half the carrots and cut into star shapes. Cut the rest into bite-sized pieces. Cut up the potatoes into small pieces. Slice your onions. Add oil to a pot and saute the onions for one minute. Add the rest of the vegetables and cook for about 3 minutes. Add water. Cook and cover until vegetables are just tender. While it's cooking, arrange the decorations on a microwave safe plate. Cover with plastic wrap and zap until cooked. Once the vegetables in your pot is soft, turn the heat off and add the curry roux. Mix until roux is completely dissolved. Cover and turn heat back on to medium-low heat and cook for another 10 minutes. Put a cup of cooked turmeric rice into plastic wrap. Mold into a flat ball. Pour some curry onto a plate and place a ball of rice on the top. Decorate with jack-o-lantern pieces and carrot stars. Serve hot and enjoy!
