This just in: across the globe, Oreo eatersare undergoing zombification.
Experts suggest that the high-sugar, highly-processed,
highly-ARTIFICIAL nature of the beloved sandwichcookie
is literally SUCKING THE LIFE OUT OF PEOPLEand turning them into the undead.
Anyone who hasn’t yet been zombified, stayaway from Oreos!
I REPEAT: Stay away from the Oreos.
Should you encounter an Oreo zombie, or ifyou’re in the presence of one now,
here’s what you need to know:
Initially, an Oreo zombie craves MORE Oreos.
But beware—feeding these cravings only FURTHERSthe process of zombification,
which ultimately results in a craving forhuman brains.
There is only one cure: a healthy, homemadealternative.
Let’s show some of that footage.
For the low carb wafer, combine almondflour, coconut flour,
cocoa powder, baking soda, baking powder andsalt.
Sift the mixture so it’s smooth with nolumps.
In a stand mixer, combine softenedgrass fed butter
or solid but softened coconut oil—
Then add eggs and sweetener of your choice.
Gradually add the sifted dry mixture to thewet
and mix over medium-low until well integrated.
It will be a bit crumbly, but that’s fine!
Wrap the dough in plastic wrap and refrigeratefor about 20 minutes to firm up.
Then you can take out about a 1/4 of thedough mixture
and roll it out really thin between parchment—1/8of an inch thin, or even less!
Use a circle cookie cutter, or even the bottomof a glass to cut out your circles.
Transfer to a parchment lined baking sheetand bake them up.
They shouldn’t rise much because we wantthese to be thin, crisp wafers.
BEWARE!
They will burn quickly so keep an eye on them!
Once those are out of the oven, allow to coolcompletely.
They will crisp up as they cool, so don’tfret if they are still a bit soft.
In the meantime, make your filling!
Add in some powdered sugar—be sure to usea sugar free variety for low carb.
I’ve linked one below and have a video showinghow to make one, too.
You can use grass fed butter or coconut oil,but again,
butter will yield the more classic Oreo textureand flavor.
Vanilla extract, salt, and a splash of milk.
Use a hand mixer to whip that up,
and feel free to make these REALLY feel likeHalloween
with some natural orange dye for your filling.
Then you can refrigerate it until you’reready to use.
When your filling has set and your cookiesare completely cool, you can assemble!
Frost one cookie,
place another one on top,
and feel free to refine that filling withan offset spatula
if you want them picture perfect.
You can enjoy as is,
but I actually think these are best afterthey’ve sat in the fridge for a few hours!
They retain their crispiness
and the filling will firm up without any fillersor processed ingredients needed.
So delicious!
This recipe is powerful enough to bring backthe dead.
